Congresswomen Go Vegetarian and I’ve Gone Vegan!

While on vacation, I read this wonderful article in the Washington Post about Rep. Debbie Wasserman Schultz and the launch (late last year) of the “Vegetarian Lunch Club” that has expanded to not just Democratic National Committee Staffers, but also other Congresswomen as well.  And now, she’s taken to Instagram (follow: cleancookingcongresswoman) to keep inspiring people to eat clean.

Albeit Rep. Wasserman Schultz was initially doing this for personal reasons but now it’s set a tone for lawmakers to promote healthy eating habits, while making personal changes in their own lives.  It gives people across the country living, shining examples of how healthy eating affects them.  I’m eager (and excited) to see what else this might do for our country.  (If any of you know of any organizations or groups I could join, to help promote this, I’d love to be a part!)

My Choice to Go Vegan

This article helped push my decision to go Vegan for a bit (to try it out and see if I could do it), even further.  After eating my way through Europe for two weeks, I decided my body needed a huge break.  Between starting work again (eight hours in front of a laptop five days a week), jet lag, and getting my body back on a regular eating schedule, this seemed like the most logical approach.  Not only do I not regret adopting the Vegan lifestyle, I’m actually enjoying it!

In the first full week I’ve been on this diet, not only have I managed to drop the three pounds I gained on the trip, but I also managed to bring my energy up to a whole new level!  Below is a sample menu of my eating schedule.  Try some of these recipes out for yourself and see how much fuller you are at every meal, and how quickly your energy picks up!  I actually don’t crave meats and dairy like I thought I would!

Morning

  • Two pieces of Rudi’s Gluten-free Double Fiber Multigrain bread
  • 2 tbsps (one on each slice) of Barnery Butter Honey and Flax Almond Butter
  • One banana cut up into slices, and placed on each piece of toast
  • Single espresso, two packets of Truvia

Lunch (Mix all ingredients together)

  • 1/2 cup of cooked quinoa
  • 1 whole avocado, cut into pieces
  • 1 whole plum tomato
  • 1 tbsp of olive oil

OR

  • 2 cups of arugula
  • 1 white peach
  • 1 box of O Organics Raisins
  • 2 tbsp of Balsamic vinegar

Afternoon Snack

  • 7 O Organics Blue Corn Chips with Flaxseed

OR

  • 1 box of O Organics raisins

Dinner

  • Roasted Vegetables: Vidalia Onion, Red Bell Pepper, Small Squash, Small Zucchini, Seasoning (Broiled on high for 10 minutes)
  • 1/2 cup of cooked brown rice

OR

  • 1/2 cup of kidney beans
  • 1/2 cup of chunky salsa (deli kind)
  • 1/2 cup of cooked brown rice
  • 1 tbsp of lime juice

Dessert

  • Apple or a bowl of watermelon and cantaloupe
